Wonton Soup with Pork and Ginger

Ingredients

  • 24 wonton wrappers
  • 250 g minced pork
  • 20 g fresh ginger
  • 2 tbsp light soy sauce
  • 1 tbsp sesame oil
  • 1200 ml chicken stock
  • 5 spring onions
  • 2 pak choi
  • 1 tsp white pepper

Method

    Grate the ginger and finely slice two of the spring onions. Mix with the pork mince, 1 tbsp soy sauce, sesame oil and white pepper.

    Place a teaspoon of filling in the centre of each wonton wrapper. Dampen the edges with water and fold to form a triangle, pressing out the air. Bring the two bottom corners together and press to seal.

    Bring the chicken stock to a simmer with the remaining soy sauce. Taste and season.

    Cook the wontons in a separate pan of boiling water for 4–5 minutes until they float and are cooked through.

    Blanch the pak choi in the stock for 1 minute.

    Ladle the hot stock and pak choi into bowls, add 5–6 wontons per person.

    Garnish with sliced spring onions and a drizzle of sesame oil.
