Ingredients

  • 300 g salt cod (saltfish)
  • 250 g self-raising flour
  • 2 avocado
  • 2 tomatoes
  • 1 onion
  • 150 ml sunflower oil, for frying

Method

  1. 1

Soak the salt cod overnight in cold water, changing the water once or twice, then drain and flake into pieces.

  2. 2

Mix the self-raising flour with a pinch of salt and enough water to make a soft dough. Divide into 6 rounds and fry in the sunflower oil for 2-3 minutes on each side until puffed and golden, to make the johnnycakes.

  3. 3

Fry the sliced onion in a little oil for 5 minutes, then add the flaked salt cod and chopped tomatoes, and cook for 4-5 minutes.

  4. 4

    Slice the avocado.

  5. 5

Serve the johnnycakes with the saltfish and sliced avocado.
