Ingredients
- 500 g tilapia fillets
- 300 g self-raising flour
- 2 tbsp tamarind paste
- 1 lime
- 200 g white cabbage, finely shredded
- 200 ml sunflower oil, for frying
Method

Mix the self-raising flour with a pinch of salt and enough water to make a soft dough. Divide into 4, roll into rounds and fry in half the sunflower oil for 2-3 minutes on each side until puffed and golden, to make the fried bakes.
- 2
Season the tilapia fillets and fry in the remaining oil for 3-4 minutes on each side until golden and cooked through.
- 3
Mix the tamarind paste with the juice of the lime and 2 tablespoons water to make the sauce.
- 4
Split the fried bakes and fill with the fried fish and the shredded cabbage.
- 5
Drizzle with the tamarind sauce and serve warm.
