Method
- 1
Heat the oven to 200C (180C fan, gas 6). Season the hake fillets with the cumin and a pinch of salt, lay them in an oiled baking dish and bake for 10 minutes.
- 2
Meanwhile, halve and thinly slice the onions and fry in 3 tbsp olive oil over a medium heat for 20 minutes, stirring now and then, until soft, sweet and golden brown.
- 3
Whisk the tahini with the juice of 2 lemons, the crushed garlic and ½ tsp salt, then whisk in about 150ml water, a little at a time, until it is a smooth, pourable cream; it will thicken before it loosens.
- 4
Stir the tahini sauce into the onions and simmer for 2-3 minutes until thickened. Pour over the fish and bake for 10-12 minutes until bubbling and the fish is opaque and flakes easily.
- 5
While it bakes, toast the pine nuts in a dry pan for 2-3 minutes and cook the rinsed basmati rice in 600ml boiling water with 1 tsp salt, covered, on the lowest heat for 12 minutes, then leave covered off the heat for 5 minutes.
- 6
Scatter the fish with the pine nuts and chopped parsley and serve straight away with the rice and the last lemon in wedges.
