Ingredients

  • 300 g dried egg noodles
  • 300 g minced pork
  • 3 tbsp tahini
  • 2 tbsp chilli oil
  • 2 tbsp dark soy sauce
  • 1 tbsp rice vinegar
  • 3 cloves garlic
  • 150 ml chicken stock
  • 2 pak choi
  • 4 spring onions

Method

    Cook the noodles according to the packet instructions. Drain and set aside.

    Blanch the pak choi in the noodle water for 1 minute. Drain and set aside.

    Mince the garlic and fry in a little oil with the pork mince over a high heat until browned and slightly crispy.

    Add the soy sauce and cook for 1 minute. Remove from the heat.

    Whisk together the tahini, chilli oil, rice vinegar, garlic and chicken stock until smooth to make the sauce.

    Divide the noodles between bowls. Pour the sauce over, top with the crispy pork and pak choi.

    Garnish with sliced spring onions and an extra drizzle of chilli oil. Toss at the table before eating.
