Prawn Toast with Sesame Seeds

Ingredients

  • 300 g raw king prawns, peeled
  • 6 white bread, thick-sliced
  • 80 g sesame seeds
  • 1 egg white
  • 3 spring onions
  • 15 g fresh ginger
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 500 ml vegetable oil

Method

    Blitz the prawns, spring onions, ginger, soy sauce, sesame oil and egg white in a food processor to a rough paste.

    Spread the prawn paste generously over one side of each slice of bread, right to the edges.

    Scatter sesame seeds over a plate and press the paste-side of each slice firmly into the seeds to coat.

    Cut each slice into 4 triangles.

    Heat the vegetable oil in a deep pan to 180°C. Fry the triangles paste-side down for 2 minutes, then flip and fry for 1 minute until golden.

    Drain on kitchen paper and serve hot with sweet chilli dipping sauce.
