Pork Mince and Ginger Stir-Fry with Egg Noodles
Ingredients
- 500 g pork mince
- 300 g medium egg noodles
- 30 g fresh ginger
- 3 clove garlic cloves
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 4 spring onions
- 2 tbsp vegetable oil
Method

Cook the egg noodles according to packet instructions, drain and toss with a little sesame oil to prevent sticking.

Peel and finely grate the ginger, crush the garlic, and thinly slice the spring onions.

Heat the vegetable oil in a wok over high heat until smoking. Add the pork mince and stir-fry for 5–6 minutes until golden and cooked through.

Add the ginger and garlic and stir-fry for 1 minute. Pour in the soy sauce and toss everything together.

Add the noodles to the wok and toss well to combine. Serve immediately scattered with the spring onions and a drizzle of sesame oil.
