Method
- 1
Heat the oven to 240C (220C fan, gas 9) with 2 large baking trays inside.
- 2
Mix the za'atar with 6 tbsp extra virgin olive oil to a loose paste.
- 3
Divide the ready-made pizza dough into 4. On a surface dusted with the plain flour, roll or stretch each piece into a round about 20cm across and 5mm thick, then press your fingertips all over to make dimples.
- 4
Spread the za'atar paste over the rounds, leaving a thin border. Slide them onto baking paper on the hot trays and bake for 8-10 minutes until the edges are golden and the bases crisp.
- 5
Meanwhile, cut the tomatoes and cucumber into chunks and toss with the mint leaves, the juice of the lemon, the remaining 1 tbsp oil and a pinch of salt. Serve the manakish hot with the salad and black olives, folding the vegetables inside to eat.
