Lemon Chicken

Ingredients

  • 600 g chicken breast
  • 2 lemon
  • 3 tbsp caster sugar
  • 150 ml chicken stock
  • 5 tbsp cornflour
  • 1 egg
  • 1 tbsp light soy sauce
  • 2 clove garlic
  • 500 ml vegetable oil
  • 2 spring onions

Method

    Slice the chicken breasts in half horizontally to form thinner fillets. Beat the egg with the soy sauce and toss the chicken in it.

    Coat each piece in cornflour, pressing to adhere well.

    Heat the oil to 180°C and fry the chicken for 5–6 minutes until golden and cooked through. Drain and rest for 2 minutes, then slice.

    Juice and zest both lemons. Mince the garlic.

    Fry the garlic in a little oil for 30 seconds, then add the lemon juice, zest, sugar and chicken stock.

    Mix 1 tsp cornflour with 1 tbsp water and stir into the sauce. Simmer for 2 minutes until glossy and slightly thickened.

    Arrange the sliced chicken on a plate, pour the lemon sauce over and garnish with sliced spring onions.
