Lamb Mince and Cumin Fried Rice
Ingredients
- 600 g cooked basmati rice (cooled)
- 400 g lamb mince
- 2 tsp whole cumin seeds
- 1 onion
- 3 clove garlic
- 2 long green chillies
- 2 tbsp soy sauce
- 2 tbsp vegetable oil
Method

Heat the oil in a wok over a high heat. Add the cumin seeds and let them sizzle for 20 seconds.

Add the finely sliced onion and fry for 3–4 minutes until golden.

Add the crushed garlic and sliced green chillies, stir-fry for 1 minute.

Add the lamb mince, breaking it up, and cook for 5–6 minutes until browned.

Tip in the cold rice and stir-fry over a high heat for 3 minutes, pressing against the wok.

Drizzle over the soy sauce, toss to combine, taste for seasoning and serve.
