Method

  1. 1

Grate the onion and squeeze out the juice. Mix with the lamb mince, half the parsley (finely chopped), the allspice, ½ tsp chilli flakes and 1 tsp salt and shape into 8 long sausages around skewers.

  2. 2

For the sauce, heat 2 tbsp olive oil in a pan over a medium heat and fry the crushed garlic and chopped red chilli for 1 minute. Add the chopped tomatoes, the remaining chilli flakes and ½ tsp salt and simmer for 15 minutes until thick and jammy.

  3. 3

Heat the grill to high. Brush the kafta with the remaining oil and grill for 10 minutes, turning, until charred and cooked through with no pink in the middle.

  4. 4

Warm the pitta breads, tear into pieces and spread over a platter. Spoon over some of the sauce, lay the kafta on top and cover with the rest of the sauce. Scatter with the remaining parsley, chopped, and serve with lemon wedges.
