Method
- 1
Cut the smoked streaky bacon into small strips.
- 2
Heat half the groundnut oil in a wok and fry the bacon for 4 minutes, until crisp and cooked through with no pink remaining, then lift out.
- 3
Beat the eggs, pour into the wok and scramble briefly until just set, then lift out.
- 4
Add the remaining oil with the sliced fresh red chilli and stir-fry for 30 seconds, then add the cold rice, breaking up any clumps, and stir-fry for 3 minutes until hot through.
- 5
Return the bacon and egg to the wok with the light soy sauce and most of the spring onions, and toss everything together for 2 minutes.
- 6
Scatter with the remaining spring onions and serve immediately.
