Halloumi & Roasted Pepper Wraps

  • 250 g halloumi
  • 280 g roasted red peppers in brine
  • 4 large flour tortillas
  • 80 g baby spinach
  • 200 g hummus
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 lemon

Method

    Slice the halloumi into 1cm planks and pat dry with kitchen paper. Drain and slice the roasted peppers.

    Brush the halloumi with olive oil and dust lightly with smoked paprika. Heat a griddle or frying pan over high heat and cook the halloumi for 2 minutes each side until golden and charred.

    Warm the tortillas in a dry pan for 30 seconds each side.

    Spread a generous layer of hummus over each tortilla. Scatter over the spinach, then lay on the griddled halloumi and sliced peppers.

    Squeeze over a little lemon juice, fold in the sides of each tortilla and roll up tightly. Cut in half and serve.
