Ingredients

  • 300 g salt cod (saltfish)
  • 300 g self-raising flour
  • 1 onion
  • 2 tomatoes
  • 1 scotch bonnet chilli
  • 200 ml sunflower oil, for frying

Method

  1. 1

Soak the salt cod overnight in cold water, changing the water once or twice, then drain and flake into pieces.

  2. 2

Mix the self-raising flour with a pinch of salt and enough water to make a soft dough. Divide into 4, roll into rounds and fry in the sunflower oil for 2-3 minutes on each side until puffed and golden, to make the bakes.

  3. 3

Fry the sliced onion and chopped tomatoes in a little oil for 6 minutes, then add the finely chopped scotch bonnet chilli and the flaked salt cod.

  4. 4

Cook for 4-5 minutes until hot through.

  5. 5

Split the fried bakes and fill with the saltfish to serve.
