Greek-Style Baked Feta with Olives, Lemon and Oregano

Ingredients

  • 400 g feta cheese
  • 150 g kalamata olives
  • 300 g cherry tomatoes
  • 2 red onion
  • 2 tsp dried oregano
  • 3 tbsp olive oil
  • 1 lemon
  • 0.5 tsp chilli flakes

Method

    Preheat the oven to 200°C (fan 180°C). Cut the red onions into wedges and place in a roasting dish with the cherry tomatoes and olives.

    Drizzle with olive oil, scatter over the oregano and chilli flakes, and squeeze over half the lemon juice. Toss to combine.

    Nestle the blocks of feta into the vegetables and drizzle with a little more olive oil. Roast for 25 minutes until the feta is golden at the edges and the tomatoes have softened.

    Squeeze over the remaining lemon juice and serve straight from the dish with crusty bread or warm pitta.
