  • 3 pitta breads
  • 1 romaine lettuce
  • 1 cucumber
  • 250 g cherry tomatoes
  • 80 g pomegranate seeds
  • 1.5 tsp sumac
  • 3 tbsp olive oil
  • 1 lemon
  • 15 g fresh mint

Method

    Tear the pitta breads into rough pieces and toast under the grill or in a dry frying pan until golden and crisp. Set aside.

    Roughly chop the romaine lettuce, halve the cherry tomatoes and dice the cucumber. Combine in a large salad bowl.

    Whisk together the olive oil, lemon juice, sumac and a pinch of salt to make the dressing.

    Add the toasted pitta pieces and pomegranate seeds to the salad, pour over the dressing and toss gently.

    Scatter over fresh mint leaves and serve immediately so the pitta retains some crunch.
