Ingredients

  • 200 g thick-cut ham
  • 150 g mature cheddar, grated
  • 150 g plain flour
  • 2 large eggs
  • 100 g panko breadcrumbs
  • 100 g mixed salad leaves
  • 300 ml sunflower oil, for frying

Method

  1. 1

Finely chop the ham and mix with the grated cheddar and half the plain flour to bind into a thick paste. Shape into 12 small logs and chill for 15 minutes.

  2. 2

Roll the logs in the remaining flour, dip in the beaten eggs, then coat in the panko breadcrumbs.

  3. 3

Heat the sunflower oil in a deep pan and fry the croquetas in batches for 3-4 minutes until golden and hot through.

  4. 4

    Drain on kitchen paper.

  5. 5

Serve the hot croquetas with the mixed salad leaves.
