Crispy Chilli Beef
Ingredients
- 400 g beef rump steak
- 5 tbsp cornflour
- 3 tbsp sweet chilli sauce
- 2 tbsp tomato ketchup
- 2 tbsp light soy sauce
- 1 tbsp rice vinegar
- 2 fresh red chilli
- 1 red pepper
- 4 spring onions
- 500 ml vegetable oil
Method

Slice the beef into very thin strips. Toss generously in cornflour until well coated.

Mix the sweet chilli sauce, ketchup, soy sauce and rice vinegar together in a small bowl.

Heat the oil in a deep pan to 190°C. Fry the beef strips in batches for 2–3 minutes until deeply crispy. Drain on kitchen paper.

Thinly slice the chilli, pepper and spring onions.

Heat a little oil in a wok and stir-fry the pepper and chilli for 2 minutes.

Pour in the sauce, let it bubble for 30 seconds, then add the crispy beef.

Toss quickly to coat, scatter over the spring onions and serve immediately with egg-fried rice.
