Chilli and Garlic King Prawns

Ingredients

  • 500 g raw king prawns, peeled and deveined
  • 5 cloves garlic
  • 2 fresh red chilli
  • 25 g fresh ginger
  • 2 tbsp light soy sauce
  • 2 tbsp Chinese rice wine
  • 1 tbsp sesame oil
  • 4 spring onions
  • 2 tbsp vegetable oil

Method

    Finely mince the garlic, ginger and chilli.

    Toss the prawns with the rice wine and a pinch of salt. Leave for 5 minutes.

    Heat the vegetable oil in a wok over the highest heat until smoking.

    Add the garlic, ginger and chilli and stir-fry for 30 seconds until fragrant.

    Add the prawns and stir-fry for 2–3 minutes until pink and just curled.

    Splash in the soy sauce and sesame oil and toss for 30 seconds.

    Scatter with sliced spring onions and serve immediately with steamed jasmine rice.
