Method

  1. 1

Soak the dried shiitake mushrooms in just-boiled water for 20 minutes until soft, then drain, squeeze dry and chop finely.

  2. 2

Finely chop the water chestnuts and mix in a bowl with the pork mince, chopped shiitake, spring onions and grated fresh root ginger.

  3. 3

Stir in the light soy sauce, chinese rice wine, cornflour and sesame oil, then mix well and beat the mixture against the side of the bowl for a minute so it binds.

  4. 4

Press the mixture into a shallow heatproof dish, smoothing the top, and set the dish in a steamer basket over simmering water.

  5. 5

Cover and steam for 20 minutes, until firm to the touch and the juices running clear with no pink pork visible when a knife is pushed into the centre.

  6. 6

Serve straight from the dish with steamed rice, spooning the savoury juices over the top.
