Beef and Black Bean Stir-Fry
Ingredients
- 500 g beef sirloin steak
- 4 tbsp black bean sauce
- 2 green pepper
- 1 onion
- 3 clove garlic
- 20 g fresh ginger
- 2 tbsp light soy sauce
- 2 tbsp cornflour
- 3 tbsp vegetable oil
- 100 ml beef stock
Method

Slice the beef thinly against the grain. Toss with cornflour and soy sauce and leave for 10 minutes.

Slice the peppers and onion into strips. Mince the garlic and grate the ginger.

Heat 2 tbsp oil in a wok over the highest heat. Sear the beef in batches for 2 minutes until browned. Remove and set aside.

Add the remaining oil and fry the onion, pepper, garlic and ginger for 3 minutes.

Stir in the black bean sauce and beef stock, then return the beef to the wok.

Toss everything together and cook for 2 minutes until the sauce thickens and coats the beef.

Serve immediately with egg-fried rice or noodles.
