Estimated from typical values for each ingredient — a guide, not a substitute for the label on what you actually buy.

Method

  1. 1

Bash the beef braising steak into 8 thin slices and season.

  2. 2

Spread each slice with wholegrain mustard, then lay a rasher of bacon and a quarter gherkin along one edge. Roll up tightly and secure with cocktail sticks.

  3. 3

Brown the rolls on all sides in a flameproof casserole, about 6-8 minutes, then remove.

  4. 4

Fry the chopped onion and sliced mushrooms in the same pot for 5 minutes, then stir in the flour and gradually whisk in the beef stock.

  5. 5

Return the rolls to the pot, cover and simmer for 60-65 minutes until the beef is tender.

  6. 6

Remove the cocktail sticks and serve with the sauce spooned over.
