Warm Roasted Leek & Smoked Mackerel Salad with Horseradish Dressing
Ingredients
- 4 leeks
- 300 g smoked mackerel fillets
- 100 g crème fraîche
- 2 tbsp horseradish sauce
- 2 tbsp olive oil
- 1 lemon
- 80 g watercress
- 15 g fresh chives
Method

Preheat the oven to 200°C. Trim and halve the leeks lengthways, then cut into 5cm lengths. Toss with olive oil, salt and pepper. Roast for 25 minutes until tender and slightly charred.

Mix the crème fraîche with horseradish sauce, lemon juice and half the chives. Season to taste.

Flake the smoked mackerel into chunky pieces, discarding any skin and bones.

Arrange watercress on a large platter. Top with the warm roasted leeks and flaked mackerel.

Spoon over the horseradish dressing and scatter with remaining chives. Serve immediately.
