Veggie Fajita Wraps with Halloumi

Ingredients

  • 250 g halloumi, sliced into thick strips
  • 3 mixed peppers, sliced
  • 1 red onion, sliced
  • 1 tbsp fajita seasoning
  • 8 large flour tortillas
  • 100 ml soured cream
  • 100 g mild salsa
  • 2 tbsp olive oil

Method

    Heat 1 tbsp of olive oil in a large frying pan over a high heat. Add the sliced peppers and onion, sprinkle over the fajita seasoning and cook for 5–6 minutes, stirring frequently, until softened and lightly charred. Remove and set aside.

    Add the remaining oil to the pan and fry the halloumi strips over a medium-high heat for 2 minutes per side until golden brown.

    Return the vegetables to the pan and toss briefly with the halloumi to combine.

    Warm the tortillas in a dry pan or microwave. Serve the halloumi and pepper mixture in the wraps with salsa and soured cream.
