  • 300 g plant-based mince
  • 400 g tinned chickpeas
  • 400 g tinned chopped tomatoes
  • 1 onion
  • 1 courgette
  • 2 tsp ras el hanout
  • 80 g dried apricots
  • 2 tbsp olive oil

Method

    Dice the onion and courgette. Halve the dried apricots. Heat the olive oil in a large saucepan and fry the onion for 6 minutes until soft.

    Add the courgette and cook for 3 minutes, then stir in the ras el hanout and cook for 1 minute.

    Add the plant-based mince and cook for 3 minutes, then add the chopped tomatoes, drained chickpeas and apricots.

    Stir well, season generously and simmer for 20 minutes until the sauce has thickened.

    Serve over couscous or with warm flatbreads.
