Vegetable and Halloumi One-Pot Pilaf

Ingredients

  • 250 g halloumi
  • 300 g basmati rice
  • 1 courgette
  • 1 red pepper
  • 600 ml vegetable stock
  • 1 onion
  • 1 tsp ground cumin
  • 2 tbsp olive oil

Method

    Dice the halloumi into cubes and fry in the oil in a large lidded pot for 3 minutes until golden. Remove and set aside.

    In the same pot, fry the diced onion, courgette and red pepper for 5 minutes.

    Stir in the cumin and rinsed basmati rice, coating in the oil.

    Pour in the stock, bring to the boil, then cover and cook on the lowest heat for 15 minutes.

    Remove from heat and leave covered for 5 minutes. Fluff the rice, fold in the halloumi and serve.
