Turmeric Halloumi with Cauliflower, Peas and Mint Yoghurt

Ingredients

  • 250 g halloumi
  • 1 cauliflower
  • 200 g frozen peas
  • 1 tsp ground turmeric
  • 1 tsp garam masala
  • 3 tbsp olive oil
  • 150 ml Greek yoghurt
  • 15 g fresh mint
  • 2 clove garlic cloves

Method

    Preheat the oven to 200°C (180°C fan). Break the cauliflower into florets.

    Toss the cauliflower with olive oil, turmeric, garam masala and crushed garlic. Spread on a large baking tray and roast for 20 minutes.

    Slice the halloumi and lay over the cauliflower. Return to the oven for 12 minutes until the halloumi is golden.

    Scatter the frozen peas over the tray for the final 4 minutes of cooking time.

    Meanwhile, stir the chopped mint into the yoghurt and season. Serve the tray bake with a dollop of mint yoghurt.
