Turkey Mince Taco Bowl with Rice

Ingredients

  • 500 g turkey mince
  • 300 g long-grain white rice
  • 400 g tinned chopped tomatoes
  • 2 tbsp mild taco seasoning
  • 200 g tinned kidney beans, drained
  • 1 red pepper, diced
  • 1 tbsp sunflower oil
  • 100 g frozen sweetcorn

Method

    Cook the rice in a saucepan of boiling salted water according to packet instructions, then drain and set aside.

    Heat the oil in a large frying pan over a medium-high heat. Add the diced red pepper and cook for 3 minutes until softened.

    Add the turkey mince and cook for 7–8 minutes, breaking it up, until browned through.

    Stir in the taco seasoning, tinned tomatoes, kidney beans and frozen sweetcorn. Simmer for 8–10 minutes until the sauce thickens and everything is cooked through.

    Divide the rice among four bowls and spoon the turkey mixture on top to serve.
