Turkey Meatball and Tomato Pasta Bake

Ingredients

  • 400 g turkey mince
  • 300 g rigatoni pasta
  • 500 ml passata
  • 2 clove garlic cloves
  • 1 tsp dried mixed herbs
  • 1 egg
  • 125 g mozzarella
  • 2 tbsp olive oil

Method

    Preheat the oven to 200°C (180°C fan). Mix the turkey mince with the beaten egg, mixed herbs and a pinch of salt. Roll into 20 small meatballs.

    Heat the oil in a large frying pan and brown the meatballs all over for 5 minutes. Remove and set aside.

    Cook the rigatoni in salted boiling water for 2 minutes less than packet instructions, then drain.

    Crush the garlic into the same pan and fry for 1 minute. Add the passata, season and simmer for 5 minutes. Return the meatballs to the sauce.

    Stir the pasta into the sauce and meatballs, then tip into a large ovenproof dish. Tear over the mozzarella and bake for 20 minutes until golden.
