Turkey Breast Steaks with Stuffing Balls and Onion Gravy

Ingredients

  • 4 turkey breast steaks
  • 300 g pork sausagemeat
  • 2 tsp dried sage
  • 2 white onions
  • 400 ml beef stock
  • 2 tbsp plain flour
  • 1 tbsp Worcestershire sauce
  • 2 tbsp sunflower oil

Method

    Preheat the oven to 190°C/170°C fan. Mix the sausagemeat with 1 tsp dried sage and seasoning, roll into 8 balls, and bake on a tray for 25 minutes until golden.

    Meanwhile, slice the onions thinly and fry in 1 tbsp oil over a low-medium heat for 15 minutes until deeply caramelised.

    Stir the flour into the onions, cook for 1 minute, then gradually add the stock and Worcestershire sauce, stirring until a smooth gravy forms. Simmer for 5 minutes.

    Season the turkey steaks with the remaining sage, salt and pepper. Heat 1 tbsp oil in a frying pan over a high heat and cook the steaks for 3-4 minutes each side until cooked through.

    Serve the turkey steaks with the stuffing balls and onion gravy poured over generously.
