Turkey and Sweetcorn Burgers with Slaw

  • 500 g turkey mince
  • 200 g tinned sweetcorn
  • 4 burger buns
  • 300 g white cabbage
  • 3 tbsp mayonnaise
  • 1 tsp smoked paprika
  • 1 egg
  • 2 tbsp vegetable oil

Method

    Drain the sweetcorn. Mix the turkey mince with the sweetcorn, smoked paprika, egg and seasoning. Shape into 4 burgers.

    Heat the oil in a frying pan over medium heat and cook the burgers for 5–6 minutes per side until golden and cooked through.

    Finely shred the cabbage and mix with the mayonnaise and a pinch of salt to make a simple slaw.

    Toast the burger buns lightly.

    Place a turkey burger in each bun and top with a generous spoonful of slaw. Serve immediately.
