Method
- 1
Mix the lamb mince and grated onion in a bowl and season well.
- 2
Lay out the wonton wrappers and place a small teaspoon of the lamb mixture in the centre of each; dampen the edges with a little water and fold into triangles or small parcels, pressing to seal.
- 3
Crush the garlic clove into the natural yoghurt, season, and set aside.
- 4
Bring a large pan of water to the boil and cook the mantı in batches for 4-5 minutes until the filling is cooked through with no pink remaining and the wrappers are tender.
- 5
Melt the butter in a small pan with the pul biber and dried mint until foaming.
- 6
Drain the mantı, divide between bowls, top with the garlic yoghurt, and drizzle with the chilli butter to serve.
