Tunisian Tuna and Potato Tagine with Harissa

Ingredients

  • 320 g tinned tuna in oil, drained
  • 500 g potatoes, peeled and diced
  • 2 tbsp harissa paste
  • 400 g tinned chopped tomatoes
  • 1 red onion
  • 3 garlic cloves
  • 1 tsp ground caraway
  • 2 tbsp olive oil
  • 1 lemon
  • 15 g fresh coriander

Method

    Heat the olive oil in a wide pan. Slice and soften the red onion for 5 minutes. Crush in the garlic and add the caraway, cooking for 1 minute.

    Stir in the harissa paste and tinned tomatoes. Add the diced potatoes and 150ml water. Cover and cook for 20 minutes until the potatoes are tender.

    Flake in the drained tuna and stir gently to combine. Cook uncovered for 5 minutes to heat through and thicken the sauce.

    Squeeze over the lemon juice, scatter with fresh coriander and serve directly from the pan with warm crusty bread.
