Tuna Nicoise Frittata

  • 200 g tinned tuna in olive oil
  • 150 g fine green beans
  • 150 g cherry tomatoes
  • 60 g black olives
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • 10 g fresh basil

Method

    Preheat the grill to high. Blanch the green beans in boiling salted water for 3 minutes, drain, and refresh in cold water.

    Halve the cherry tomatoes. Drain and flake the tuna.

    Whisk the eggs with the Dijon mustard and season well. Heat olive oil in an ovenproof frying pan.

    Arrange the beans, tomatoes, tuna, and olives in the pan, then pour over the egg mixture.

    Cook on the hob for 5–6 minutes until the base is set, then grill for 3–4 minutes until golden. Scatter with torn basil and serve.
