Tonkotsu-Style Pork Ramen

Ingredients

  • 500 g pork belly slices
  • 320 g ramen noodles
  • 1200 ml chicken stock
  • 200 ml coconut milk
  • 3 tbsp white miso paste
  • 2 tbsp soy sauce
  • 4 soft-boiled eggs
  • 4 spring onions
  • 3 clove garlic cloves
  • 1 tbsp sesame oil

Method

    Season the pork belly and sear in a hot pan until golden on both sides. Remove and slice into thick strips.

    In a large saucepan, fry the crushed garlic in sesame oil for 1 minute. Add the chicken stock and coconut milk and bring to a gentle simmer.

    Whisk in the miso paste and soy sauce. Add the pork strips and simmer for 20 minutes until tender.

    Cook the ramen noodles according to packet instructions, then divide among four deep bowls.

    Ladle the rich broth and pork over the noodles. Halve the soft-boiled eggs and place on top. Garnish with sliced spring onions.
