Ingredients

  • 500 g firm tofu
  • 50 g plain flour
  • 2 tbsp soy sauce
  • 100 g panko breadcrumbs
  • 250 ml vegetable oil
  • 4 tbsp tonkatsu sauce
  • 2 tbsp mayonnaise
  • 250 g white cabbage, finely shredded

Method

  1. 1

Press the tofu between kitchen paper for 15 minutes, then cut into 4 thick steaks.

  2. 2

Mix the plain flour with the soy sauce and enough water (about 4 tbsp) to make a smooth, thick batter.

  3. 3

Dip each tofu steak in the batter, letting any excess drip off, then press firmly into the panko breadcrumbs to coat evenly.

  4. 4

Heat the vegetable oil in a large frying pan to about 1cm deep over a medium heat. Fry the tofu for 3-4 minutes each side until deep golden and crisp.

  5. 5

    Drain on kitchen paper.

  6. 6

Serve with the shredded cabbage, the tonkatsu sauce drizzled over and the mayonnaise on the side.
