Toad in the Hole with Onion Gravy
Ingredients
- 8 pork sausages
- 140 g plain flour
- 3 eggs
- 200 ml whole milk
- 3 tbsp sunflower oil
- 2 onions
- 400 ml beef stock
- 1 tbsp Worcestershire sauce
- 0.5 tsp dried thyme

Preheat oven to 220°C/200°C fan. Make the batter: whisk the flour, eggs and a pinch of salt together, then gradually whisk in the milk until smooth. Rest for 20 minutes.

Pour the oil into a large roasting tin and add the sausages. Roast for 15 minutes until the oil is smoking hot and the sausages are starting to colour.

Quickly pour the batter around the sausages and return immediately to the oven. Bake for 25–30 minutes without opening the door, until the batter is puffed and deeply golden.

Meanwhile, make the onion gravy: fry the sliced onions in a little oil over a low heat for 15 minutes until caramelised. Add the thyme, then stir in the stock and Worcestershire sauce and simmer for 10 minutes.

Serve the toad in the hole immediately, cut into portions, with the onion gravy poured over and mashed potato or buttered greens on the side.
