  • 600 g minced chicken
  • 4 free-range eggs
  • 4 garlic cloves
  • 2 red chilli, finely chopped
  • 2 tbsp gluten-free fish sauce
  • 2 tbsp gluten-free oyster sauce
  • 30 g fresh holy basil or Thai basil
  • 4 tbsp vegetable oil
  • 300 g jasmine rice

Method

    Cook the jasmine rice according to packet instructions and keep warm.

    Heat 2 tbsp oil in a wok, fry the garlic and chilli for 30 seconds, then add the chicken mince.

    Stir-fry for 6–7 minutes until cooked through, then add the fish sauce and oyster sauce.

    Fold in the basil leaves and remove from the heat.

    In a separate frying pan, heat the remaining oil and fry each egg with crispy, lacy edges.

    Serve the mince over jasmine rice, each portion topped with a fried egg.
