Thai-Spiced Minced Pork Omelette

Ingredients

  • 8 large eggs
  • 300 g pork mince
  • 2 tbsp fish sauce
  • 4 spring onions
  • 2 clove garlic cloves
  • 3 tbsp vegetable oil
  • 1 tbsp oyster sauce
  • 15 g fresh coriander

Method

    Crush the garlic and slice the spring onions. Fry the pork mince with the garlic in 1 tablespoon of oil over high heat for 4–5 minutes until cooked through.

    Stir in the fish sauce and oyster sauce, then add the spring onions and cook for 1 minute. Remove from the heat.

    Whisk 2 eggs per portion with a pinch of salt. Heat a little oil in a small non-stick frying pan over high heat.

    Pour in the egg mixture and swirl to coat the pan. When nearly set, spoon a quarter of the pork filling onto one half.

    Fold the omelette over the filling and slide onto a plate. Repeat for the remaining three portions. Scatter with fresh coriander and serve with jasmine rice.
