Ingredients
- 600 g sweet potato, peeled and sliced
- 40 g plain flour
- 2 tbsp soy sauce
- 100 g panko breadcrumbs
- 250 ml vegetable oil
- 4 tbsp tonkatsu sauce
- 300 g sushi rice
Method
- 1
Cook the sushi rice according to the pack and keep warm.
- 2
Cut the sweet potato into rounds about 1cm thick.
- 3
Mix the plain flour with the soy sauce and enough water (about 5 tbsp) to make a smooth, thick batter.
- 4
Dip each sweet potato round in the batter, then press firmly into the panko breadcrumbs.
- 5
Heat the vegetable oil in a large frying pan to about 1cm deep over a medium heat. Fry the sweet potato in batches for 4-5 minutes each side until deep golden and tender when pierced with a knife.
- 6
Drain on kitchen paper and serve over the rice with the tonkatsu sauce drizzled over.
