Spicy Pork Sausage and Red Kidney Bean Jambalaya

- 6 spicy pork sausages
- 400 g red kidney beans
- 300 g long grain rice
- 400 g chopped tomatoes
- 1 green pepper
- 2 celery sticks
- 2 tsp Cajun seasoning
- 500 ml chicken stock

Slice the sausages into rounds and brown in a large, deep pan with a little oil for 5 minutes. Remove and set aside.

Dice the green pepper and celery and fry in the same pan for 5 minutes. Add the Cajun seasoning and stir for 1 minute.

Add the rice and stir to coat in the spices. Pour in the chopped tomatoes and stock and bring to a boil.

Reduce the heat to low, cover, and cook for 15 minutes. Drain and add the kidney beans and return the sausage.

Stir gently, replace the lid, and cook for a further 5 minutes until the rice is cooked through. Fluff and serve.
