Spicy Nduja and Courgette Rigatoni

Ingredients

  • 400 g rigatoni pasta
  • 100 g nduja sausage
  • 2 courgettes, diced
  • 400 g chopped tomatoes
  • 3 clove garlic
  • 2 tbsp olive oil
  • 15 g fresh basil
  • 1 red onion, finely sliced

Method

    Cook the rigatoni in a large pan of salted boiling water until al dente. Drain, reserving a mugful of pasta water.

    Heat the olive oil in a wide frying pan over a medium-high heat. Add the red onion and cook for 4 minutes until softened.

    Add the garlic and nduja, breaking the nduja up with a spoon. Fry for 2-3 minutes until the oil turns deep red.

    Add the courgettes and cook for 3 minutes, then stir in the chopped tomatoes and simmer for 8 minutes.

    Toss in the drained rigatoni with a splash of pasta water, scatter over the basil, and serve.
