  • 8 merguez sausages
  • 2 red pepper
  • 1 yellow pepper
  • 400 g tinned chopped tomatoes
  • 1 onion
  • 3 garlic cloves
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 tbsp olive oil
  • 300 g couscous

Method

    Heat the olive oil in a wide, heavy-based pan. Brown the merguez sausages on all sides for 5 minutes. Remove and slice into thick rounds.

    In the same pan, dice the onion and soften for 5 minutes. Slice the peppers, crush the garlic and add both with the paprika and cumin. Cook for 3 minutes.

    Pour in the tinned tomatoes and 100ml water. Stir in the sliced merguez, cover and simmer for 20 minutes until the sauce is rich and thick.

    Meanwhile, prepare the couscous with 360ml boiling water, cover for 5 minutes and fluff. Serve the tagine over the couscous.
