Spiced Turkey Mince Stuffed Jacket Potatoes

Ingredients

  • 4 large baking potatoes
  • 400 g turkey mince
  • 400 g tinned chopped tomatoes
  • 1 onion
  • 100 g cheddar cheese
  • 2 tsp mild curry powder
  • 1 tbsp vegetable oil
  • 20 g butter

Method

    Preheat the oven to 200°C/180°C fan. Prick the potatoes all over, rub with oil and bake directly on the oven rack for 50–60 minutes until the skin is crisp.

    Meanwhile, fry the diced onion in the vegetable oil for 5 minutes. Add the turkey mince and cook until browned.

    Stir in the curry powder and cook for 1 minute, then add the chopped tomatoes and simmer for 15 minutes. Season well.

    Once the potatoes are cooked, split them open and press the sides to open up. Add a knob of butter to each.

    Spoon the turkey mince over the potatoes and top with grated cheddar. Grill for 2–3 minutes to melt the cheese.
