Spiced Sweet Potato & Peanut West African Stew

Ingredients

  • 700 g sweet potatoes
  • 100 g smooth peanut butter
  • 400 g tinned chopped tomatoes
  • 400 g tinned chickpeas
  • 1 onion
  • 3 clove garlic cloves
  • 20 g fresh ginger
  • 1 tsp cayenne pepper
  • 500 ml vegetable stock
  • 2 tbsp vegetable oil

Method

    Peel and cube the sweet potatoes. Dice the onion. Crush the garlic and grate the ginger.

    Heat the oil in a large pot. Fry the onion for 5 minutes, then add the garlic, ginger and cayenne and cook for 2 minutes.

    Add the sweet potato and stir to coat in the spices.

    Stir in the chopped tomatoes and stock. Bring to the boil, then reduce heat and simmer for 15 minutes.

    Add the drained chickpeas and peanut butter. Stir well until the peanut butter is fully incorporated.

    Simmer for a further 10 minutes until the sweet potato is tender and the sauce is thick. Serve with rice.
