Spiced Red Lentil and Spinach Soup

Ingredients

  • 200 g red lentils
  • 100 g baby spinach
  • 1 onion
  • 3 clove garlic cloves
  • 1200 ml vegetable stock
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tbsp olive oil
  • 1 lemon

Method

    Heat the olive oil in a large saucepan over a medium heat. Finely dice the onion and cook for 7 minutes until golden and soft.

    Add the crushed garlic, cumin and coriander. Stir and cook for 2 minutes until the spices are fragrant.

    Rinse the lentils well and add to the pan. Pour over the stock, season generously and bring to the boil.

    Reduce the heat and simmer for 20 minutes, stirring occasionally, until the lentils have broken down completely and the soup is thick.

    Stir in the baby spinach and cook for 1–2 minutes until wilted. Squeeze in the juice of the lemon and taste for seasoning.

    Serve in bowls with warm flatbreads or pitta on the side.
