Spiced Lentil & Sweet Potato Burgers

Ingredients

  • 400 g sweet potato
  • 400 g tinned green lentils
  • 2 tsp curry powder
  • 60 g porridge oats
  • 4 spring onions
  • 4 brioche burger buns
  • 4 tbsp mango chutney
  • 2 tbsp sunflower oil

Method

    Peel and cube the sweet potato. Microwave on high for 8 minutes or until completely tender, then mash thoroughly and leave to cool slightly.

    Drain and rinse the lentils. Finely slice the spring onions. Combine the sweet potato mash, lentils, spring onions, curry powder and oats in a bowl. Season well.

    Shape into 4 patties and chill for 15 minutes to firm up.

    Heat the oil in a non-stick pan over medium heat. Cook the patties for 5 minutes each side until golden and heated through.

    Toast the brioche buns. Spread mango chutney on the base, add the patty and any salad you like, then close and serve.
