Spiced Chickpea & Spinach Flatbread Pizzas

  • 400 g tinned chickpeas
  • 200 ml passata
  • 2 tsp garam masala
  • 100 g baby spinach
  • 4 flatbreads
  • 1 red onion
  • 2 tbsp olive oil
  • 2 garlic cloves

Method

    Preheat the oven to 200°C/180°C fan. Drain and rinse the chickpeas. Finely slice the red onion and crush the garlic.

    Heat the oil in a pan. Fry the onion for 3 minutes, add the garlic and garam masala and cook for 1 minute more. Add the passata and chickpeas and simmer for 5 minutes. Season well.

    Place the flatbreads on baking trays. Spread the chickpea sauce over each one, leaving a small border.

    Scatter the spinach leaves over the top and bake for 8-10 minutes until the edges are crisp.

    Remove from the oven, drizzle with a little extra olive oil and serve immediately, cut into pieces.
