Smoky Black Bean & Chipotle Chilli

Ingredients

  • 800 g tinned black beans
  • 400 g tinned chopped tomatoes
  • 2 tbsp chipotle paste
  • 2 red onion
  • 2 red pepper
  • 4 garlic cloves
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 tbsp vegetable oil
  • 200 ml vegetable stock

Method

    Dice the red onion and red pepper. Crush the garlic.

    Heat the oil in a large saucepan over medium heat. Fry the onion and pepper for 5 minutes until softened.

    Add the garlic, smoked paprika, cumin and chipotle paste. Stir and cook for 2 minutes.

    Drain and rinse the black beans, then add to the pan along with the chopped tomatoes and stock.

    Bring to the boil, then reduce to a simmer and cook for 20 minutes, stirring occasionally, until thick and rich.

    Season generously with salt and pepper and serve with rice or jacket potatoes.
