Smoky Black Bean & Chipotle Burgers
Ingredients
- 400 g tinned black beans
- 2 tbsp chipotle paste
- 80 g breadcrumbs
- 1 red onion
- 2 clove garlic cloves
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 4 burger buns
- 2 tbsp sunflower oil
- 1 iceberg lettuce

Drain and rinse the black beans, then tip into a large bowl and mash roughly with a fork, leaving some texture.

Finely dice the red onion and crush the garlic. Add to the beans along with the chipotle paste, cumin, smoked paprika and breadcrumbs. Mix well and season generously.

Divide the mixture into 4 equal patties and press firmly so they hold together. Chill in the fridge for 10 minutes.

Heat the oil in a large frying pan over a medium-high heat. Fry the patties for 4 minutes each side until a dark crust forms.

Lightly toast the burger buns. Serve the patties in the buns with shredded iceberg lettuce and your favourite condiments.
